Channah`s Humus

500 gr tin of chick peas

Tahin

Olive oil

Juice of 2 lemons

Garlic cloves

Salt

Peppers

Ground chili

1 red chilli pepper

fresh mint leaves for decoration



Preparation:

Chick peas with 2 cloves of garlic, red chilli pepper to the simmer and cook until soft.

Drain the chickpeas, keep the water, scrape out the chilli pepper, throw it away.

Mix the chickpeas with tahini, lemon juice in a mixer, olive oil and water to a smooth mixture. Season to taste with salt, lemon juice, paprika and chili. To remove the bitterness, season with liquid honey. Leave to stand overnight in the refrigerator.


Before serving:

Place the mixture in a bowl, smooth it down, form a hollow in the middle with a spoon, pour olive oil into it. Black olive(s), mint leaves to garnish, sprinkle the edge of the humus with herbal salt, sprinkle everything with chili and paprika loosely (caution: do not season too hot because of the beautiful appearance.
